Vegetarian cook book

Not looking to go vegetarian but want to have a night or two per week and am looking for inspiration.
What I don't want are celebrity chef books or youtuber lifestylist books.
I'm after a book that contains normal every day easy to make veggie meals. (Things like veggie lasagne, curries, mexican.
We aren't massively into things like tofu or paneer which seem to appear in a lot of recipes.
Does any one have any recommendations?

in the dishes you mention just replace lasagne meat with mushrooms and black beans or if you want it easy just use quorn mince, same for mexican - for currys just stick every veg in the world in there its limitless! peppers work really well as do potatoe chunksWhat I don't want are celebrity chef books or youtuber lifestylist books.

Not a book, but one of our favourite meals which happens to be veggie.
Warm tortilla wraps filled with:
- Halloumi
- Hummus
- Tzatziki
- Roasted red onion
- Roasted sweet potato (or butternut squash also works well)
- Cherry tomatoes
- Rocket
- Spicy sauce (I prefer Encona)
Start with a good smear of hummus, then add a couple of slices of fried halloumi, a handful of the roasted sweet potatoes, bit of the roasted onion, salad to taste. Dollop of tzatziki on top followed by hot sauce to taste. Fold the bottom up, then the sides over, and seal with a smear of tzatziki. Three of these and you'll be laughing.
Food of the Gods and no meat involved.

Not quite what you're asking for, but I would recommend having a go with Hello Fresh for a few months, 3x a week choosing their vegetarian option.
The meals are absolutely fantastic and they're not really that expensive when you consider lack of waste etc.
Other half's a pescatarian, me a carnivore
We're both proficient vegetarian cooks, but the Hello Fresh meal cards really did give something new and switched us on to food that we would typically have avoided (lentils; chick peas; etc).
Once you've done a few months the menus do get a bit repetitive, however by then you'll have a substantial repertoire of easy, really tasty vegetarian dishes.
(ref books, Delia Smith's veggie cookbook is awesome. The oven baked wild mushroom risotto out of here is a knock out dish - first thing I cooked for my other half).

Seconded.It is my most used cook book. I have about thirty.

I use his basic risotto recipe (he does a tomato and mozzarella which is lovely
) and chuck anything I fancy in it. Tonight it was spinach, mushroom and cheddar.
