Chimichurri?

it is made of finely chopped parsley, minced garlic, vegetable oil, oregano, and white vinegar.

Could be anything. Chives, tarragon, parsley, chervil or any of another pile of different things.

What did the herb taste of?

I had a nice steak a few weeks back at a pub in Oxfordshire (north Oxfordshire if that makes a difference?).

Could anyone tell me what "cut" it was? I'd like to try cooking one at home.

I made one tonight with minced garlic, red chilli, coriander, red wine vinegar, white wine vinegar, and a bit of olive oil. Outrageously tasty.

Why didn't you ask the waiter what the herb was, rather than asking us to guess at something we haven't even seen?

Do you recall the name of the restaurant, OP?

If so, just give them a call and ask. It may even be listed on their online menu.

Give it a go, you need a large quantity of flat leafed parsely, garlic and butter. Splash of white wine. Blender. Job done.

I keep home garlic butter in the fridge for cooking steak.
Simply, butter, chopped parsley, chopped garlic, mixed over a bain marie, wrapped in cling film to form a "sausage" and bung it in the fridge.
Add as much as you like to the pan and do nothing else other than oil the steak.

Could be a Bernaise? Tarragon gives it a sweet aniseed flavour, which sounds completely wrong for a steak, but it's a classic...Rich, creamy & with a tang that won't overpower a good chunk of meat, blood & fat.

As an ex chef, and father to a current one, I'm guessing it was the 'chefs secret'....thyme with butter and garlic, we would baste the steak as it cooked, then discard the thyme sprig, but of course some leaves were left behind.
