Usual other staple foods abound.

I would be tempted to lightly fry pork medallions, some decent mash, few veg and a fennel and onion cream sauce.

Pork sliced, batted thin and turned into schnitzels, served with a cream, white whine and fennel sauce. Some form of spuds as well.

Thank you, apologies, I never came back to update.

The pork got pan fried.

The Fennel and onions got fried, plus a little brown sugar and balsamic vinegar.

There was nothing left over.

Try parboiling fennel until tender to the pint of a knife, halve lengthways, dot with butter, cover with grated Parmesan and bake until the cheese bubbles.
