I passed my car test in 91, so will have grand father rights on 7.5 tonners, I think.

I passed my class 2 a few years ago and have my CPC's.

The CPC's will need renewing shortly, in a year or two.

We no longer have a LGV at work, so I don't need the Class 2 any more.

We have a horse non HGV horse box that I take to be tested from time to time. The tacho doesn't work in it.

Do I need to keep the CPCs up to date to drive it and what about the tacho?

No, not if its for private use. You don't need a tacho or operator's licence for a horsebox as long as its not being used commercially.
You don't need CPC for private use.
