I'm a driving instructor so after repeated maneuvers it starts to become unusable, so kinda not normal driving.
When I took it to a local garage they noticed no voltage was being supplied to the steering motor under load, I just got it back from the dealer today who claimed it was the alternator, it hasn't fixed the issue.
I just wanted to ask to check i wasn't insane or asking too much of a car.
Are they using proper Vauxhall diagnostic gear to view codes etc ?
They'd need to check any live data relating to the EPS system to see if it's showing anything strange.
Generic OBD readers will not tell you anything relating to EPS
It would seem incredibly strange for the unit to be faulty, and not report a warning light. And what causes it to recover ? As you arent saying it stays like this ?

It was a Bosch reader, it had live readouts of voltages etc Can't say it was what Vauxhall use.They'd need to check any live data relating to the EPS system to see if it's showing anything strange.

The heaviness seems to 'wear off'. First thing in the morning is ok, I have heard from other comments that it's overheating, I suppose that makes sense but that's no use to me, other instructors have said it doesn't happen to their cars although it does happen to a lot of corsas

Steering racks can wear, but that just makes noise, also had the lower column UJ seize up which made the self return to centre very poor.
But the EPS has always worked fine...although I guess yes on occasion if doing a lot of manoeuvring it could get a little heavy at times but never anything that actually caused a concern or problems or persisted.
It's very common for people to retrofit to other vehicles too.
But of course anything can go faulty so someone would need to determine if that is the case by testing on the vehicle when it is happening.

If you're still getting this problem, it might not actually be a fault at all. I recently bought a Mitsubishi with ESP, and google suggests that if the steering is turned multiple times, then the ESP switches off, to save burning out the motor. Then it returns to normal once it's had a bit of a rest. Perhaps that's all it is.
The EPS system will have thermal and voltage limiting modes.
The Alternator in a car will typically not provide enough current to run the EPS continuously, also as mentioned above it may be overheating.
The other possibility of above, is that you are draining the battery and/or your battery has had it.
Outside possibility is you have too much friction in the steering setup. e.g. worn rack, duff geometry etc.
