When contacting a business as a consumer, does it matter if I use their web Contact Us Form or emailing direct from my google account? If I were to use the former, will I be emailed a copy of my query and how important is filling out the phone number section?

There's no guarantee of a response even if you use the online form. You're not obliged to give your phone number - feel free to use a made up number if one is required. It might help to look at alternatives like social media contact or finding out the relevant department and emailing an individual directly rather than a generic 'contact us' form.

Incidentally OP - and just as an example - I got a faster response by writing to an ISP about an issue after difficulties with resolution through customer service. Snail mail still has it's uses.
