As above I've just thrown a casserole in the oven normally I'd put it on a rack, this time I'm using the tray in middle of the oven.

What's the rule of thumb, if any?

Anything I want cooking more evenly all way round, rack.

Anything that will stand/benefit from some "caramelisation" on the bottom, trays.

e.g. pizzas - rack; chips - tray.

But it's far from a hard and fast rule.

It wont make one iota of difference to your casserole.

If it has the potential to fall through a rack ie drips, put it on a tray, if not, rack.
