If I buy a car that has some remaining OPC warranty on it, can anyone give me an idea of what it'll cost to extend it for 1 or 2 years when it comes to renewal time ?

Also, if it's out of the OPC warranty, is it worth paying for the 111 point check, rectifying any issues up to spec, and then adding an OPC warranty or just stick with an aftermarket warranty (Warrantywise/RAC/etc) ?

Are you intending to have it serviced in the OPC network? If not then i wouldnt warranty it with them. You will pay a lot more for it and if anything needs doing they will try argue out of doing it if the car has not been maintained by Porsche themselves, so its a waste of money if they win the argument.
There is an argument that should an ‘indi’ do it with genuine porsche parts they cannot argue however, they will for sure as they have no record of the work on ‘their’ system.

I suggest you phone your local OPC for definitive prices for your model as 2 years is slightly cheaper than 1 year IIRC.
And if your car is due a service get them to do it and the 111 point check at same time as most the items are covered in the service and you might get away with paying for the check IF you take out the warranty with them.

Around the £2K mark for two years and just over £1K for 1 year. You can chose not to have the Porsche assist (think its £87 a year) saving a little. You have to have the 111 point check regardless of whether its under warranty or not which is annoying, if its currently under warranty then liability should be the same for them. Some dealers will half the price of 111 point if you have it done the same time as service, also if you take two year warranty you save the extra £100-£200 for the following years 111 check.

They say the 111 point charge is at the Dealers discretion, depending on your relationship with them, I've yet to hear of one do it for free.

Mine was free as I was having major service at the time and renewed for 2 years

Who did yours? I’ve just had a major service and renewed for two years they still charged me for the 111 albeit 1/2 price.

I need to find a better OPC
