Prawn tempura

Just got back from Billingsgate with top quality fat fat uncooked prawns. Peeled and deveined. 2.8kg drained weight for £30

Any prawn tempura recipes out there? For making at home

We dont have a fryer but might just get one.

Probably only a billion or even less on Google, I imagine this sort of recipe would be very hard to find. It's not a Japanese staple food or anything, after all. rolleyes

And the first 5-6 results on google are all different rolleyes

OP. I have had good results with.

85g of plain flour
1/2 tsp salt
1/2 tsp sugar
200ml of sparkling water, chilled

Do not over mix and deep fry at 180. One thought is if the prawns are very large you might want to try a slightly lower temp as the batter might over brown by the time they cook.

So that's the "right" one? Get over yourself, you are not the god of all thinks cooked. Any of the Google recipes would no doubt work out fine. Cooking isn't a yay/nay science, you get different results with each recipe - including yours.

No doubt? So you haven't tried them and you don't know. I've seen many 'recipes' online which have needed a lot of work to get right as can be seen from comment sections. 21TonyK was giving a recipe that he had good results with. That's all.

Strange reply you've given to someone who is trying to help another PHer out.

I have indeed! It's important to avoid dehydration. And yes, that tempura recipe is exactly what I use - it ain't broke, why fix it? Dip it in the mix, then put it in the fryer, job done with no messing about.

I did - "Google it".. It isn't rocket science, its a light, simple batter - I'm no chef, but Tempura batter is about as hard to make as instant coffee.

i would go half on the flour and make up the other half of the weight with cornflour, just makes for a lighter batter. love tempura. i agree with a past comment though panko makes for a great coating. i used to deliver to a lot of japanese places when i was a driver, got to see and taste some amazing stuff. the best i had was in Glasgow and Edinburgh place in glasgow called seven spices was particularly amazing. shame the orders i delivered were so bloody heavy though hahaha. they always looked after me so cant argue. however you do it , hope you enjoy.

I get the feeling that I need to buy a fryer. I'm not sure I'll get the desired results with a chip pan on my electric hob

Thanks for the helpful replies. I was going to ask about chilli mayonnaise next but might just google it instead..

A £10 temperature probe is a cheaper option if you don't want to splash out on a fryer. I often CBA to dig the fryer out of the cupboard and set it up so stick my temperature probe in a deep saucepan of oil.

It's quite fun using a fondue pot at the table to cook the tempura - hot oil fondue pot (electric), pot of batter, prawns, steak slices (no batter used here), mushrooms, onion etc.
