I'm looking for a concensus on which discs and pads to use on a 997.2 C2S

Consensus does not live here!

Anything from a known name half the price of OPC is my take.

Provided it does not have the Extended Warranty.

997s all use Brembo brakes. Pad material can differ depending on when the car was manufactured, but generally the pads are Pagid.
Assuming it's not under OPC warranty, you can buy an entire cars worth of discs and pads for between £400 and £450 from Euro Car Parts. This would be for genuine Brembo discs and Pagid pads.
A great side benefit of doing this will not only mean getting quality items for cheap, but actual Brembo discs have the centre hats painted a nice heat-resistant metallic grey, whereas Porsche-supplied Brembos don't.

Design 911 sells front and rear kits. Have replaced discs and pads all round on mine for £690 inc VAT.

Brembo supply calipers to Porsche

They do not supply discs! They do not supply pads
