Quick and Easy ideas for lunch

Evening all!
As per the title, I'm after some ideas for lunches for work, other than the usual salads and sandwiches. I'm trying to save a bit of cash and lose some weight as I'm resorting to Tesco meal deals or a trip to a burger van! I find myself getting bored of the same sandwiches, boring salads and wraps.
I'm happy doing some preparing and cooking the night before, and I have use of a fridge and microwave at work.

I'd skip the anchovies though, fish really isn't my thing....

me too, they act as a seasoning as well, just chop them up. I add them to loads of stuff.I mean make a small incision into a lamb shank/roast lamb before cooking & add an anchovy

For quick n easy tinned is good. Tinned Mixed beans, brown some bacon, chop and add to beans.

Now before I get laughed off of the thread bear with me and forget all you know about "stodgy thick Pot Noodles".
Korean noodles - I use them as a base, shred some chicken from your Sunday Dinner into it (sometimes I'll use half a small tin of crab) or just some finely sliced veggies or mushrooms. The broth is stunning..............oh and very very hot if you use all of the pack of spice powder supplied.
Nice with an raw egg cracked and whisked around too.
Use chopsticks and a wedge of crusty bread

Cheers for all the good ideas folks! I think I'm sorted this week as I've got a couple of chicken breasts that need cooking up, so I'm going to throw some noodles together with some mixed beans, peppers and leftover bacon. Sounds a bit strange bit I'm willing to try!

Chop up a load of chunky veg - sweet potatoes, celeriac, swede, butternut squash - etc and roast for an hour at 180C with ginger, garlic, chillies, and a drizzle of olive / rapeseed oil over. This is your 'vegetable base'. Use whatever you like or is in season, and refrigerate.
Take a bit of this each day and add to it. Favourites of mine are butter beans, smoked tofu or cashew nuts, but it could equally be meat - leftover chicken works well.

Couscous is also very easy to make, prawns can be cooked straight from frozen, anything cooked straight from frozen is very convenient.
OP - do some reaseach into a pressure cooker (instant pot/Fast Slow pro etc) and see if it work for you.

"Boring salads" can be made into something very moreish with the right flavours/dressings and add-ons, (I f
kin' hate salad normally).
