Remote install of AV Gear - Help!

Hello All,
I'm currently renovating my house and just starting to do a full re-wire. As each room only has one power socket in it, there will be a fairly substantial number of new holes and cable runs in walls so thought I may as well sink some infrastructure in there now.
The plan is a 5.1.2 setup (Yamaha RXA3070) but would like to have my AV Cabinet under the stairs out the way. The stairs run along the other side of the wall where the main sofa and rear speakers go so should be fairly simple to get the necessary cabling in to the room. I use CYP HDMI over CAT6, so won't be running a really long HDMI cable to the OLED screen in the living room.
I've seen some wall plates which have speaker inputs, CAT6, HDMI etc which I thought would be pretty perfect for me to install under the stairs where the AV cabinet will go and install the appropriate things at the other end, eg speaker wall plates etc, so once it's in, you just plug speakers in to wall plates using a very short cable and some banana plugs.
The first thing I wanted to know is whether this adds any weak points to the system? There's more components, more joins etc, but if it's all wired in and connected up properly, I don't see why it should really add any weaknesses.
The next thing which I guess is probably the bigger concern is can you use a games console such as a PS4 when there is no line of site and it's in a different room? I think some console controllers are Bluetooth so guess it 'could' work, but would want to know for a fact before venturing off down this route and future-proofing as best I can
The other devices will be fine as my HDMI over CAT6 devices have IR extenders so will take the signal back in to the cabinet but am unsure what other problems I'll introduce by having my AV gear the other side of a wall.
Any advice or recommendations would be greatly appreciated!!
