My 987.2 Cayman S (manual) is normally driven every week at least, but recently went through a period of 5-6 weeks of not being driven. When I tried to back it out of the garage, I couldn't get it into gear. The lever would move left/right no issues, but was very stiff trying to engage any gear.

At first I thought the clutch had gone, but after leaving the engine running for 10 mins it got a little easier and I eventually (after a lot of force) managed to get it into reverse. I took it for a drive and the gearchange got easier as it got warmer. Eventually, it was back to normal.

I then left it a week again, and had no problems at all when I went to start it the following weekend. Maybe a little stiff when cold, but it usually is. It's just ticked over 90k miles and is otherwise reliable.

What causes this? Gearbox oil going sludgy? Why would it be much worse after 6 weeks than after only 1 week?

This can sometimes be clutch hydraulics related. An issue with clutch slave cylinder. I've found that a good sign of it being this is if you can get it in gear when the engine is off but then have problems with the engine on. Simply bleeding the slave cylinder can fix the issue. The problem with most slaves is that they're in such an awkward place that they they rarely get bled when doing a brake fluid change.
