Please give your reasons for applying for this post?

I'm 95% of the way through an online application and stuck on the above,
the reality is:
its a similar role however pays more money
I find the projects my current employer works on too easy and need a new challenge
the new company work on more diverse and certainly more interesting projects
I'm super ambitious and genuinely believe this will help me develop and meet my career aspirations
For reference I'm a construction site manager
I always struggle to come across well with these questions, if someone can please give me some pointers it would be much appreciated (just jazz up the above!)

What you've already written is good enough imo as it's short and concise; no point fluffing it up. Remember that they'll likely be looking at dozens of application (at least) and will probably glide over paragraphs and paragraphs of text.
I don't mind those questions so much, but I was completing an application yesterday and one question asked "Please list all of our competitors and explain why we are a superior company to each one" - f
k right off! Cancelled my application and closed the window.

"Since they abolished the barter system I need this job in order to pay for goods and services"
However what you have is great:
In the X years I have been in my current role I have been successful in delivering X projects, on time and budget. I'm now looking to further my experience and this role gives me the opportunity to develop my skills in X in new environments.
I enjoy challenge and would look forward to using the significant skills and experience I have to ensure I thrived in this new role.
