Ok so I’m after some points of view... I’m looking at 2 cars, same model and spec.
1 has 15k miles but a 3 year gap in service history as it sat garaged and unused as the owner was poorly.
The other has 35k miles but a full yearly service.

Which one?!
Oh and it’s an Aston Martin Vantage, dream car of mine and been saving for years!

How do they drive?. What needs doing on them?. I would get a specialist to check over whichever you decide to buy, don't get fixated on mileage only.

15k miles every day!
Dealers always charge far more for lower mileage cars. When you have it serviced again it's the one everybody would choose.

Low mileage and not serviced every year is very common on a car like this.
You will see a massive difference in the quality of a 15k mile car compared to a 35k mile car.

Both drive great, and neither need any work doing on them. Also both will have a 12 month warranty, and they are the same price!

If it wasn't used at all for 3 years, that might make me nervous. I don't think that's good for cars.

On the other hand, if it's a genuine warranty then I'd probably choose the 15k one.

And they are fabulous cars to own.

If they are the same age I’d take the low miler.

The only thing deteriorating (relatively) while it sat is the oil. The moving parts on the other car have 20k miles more wear.

I'd buy the 35k car, the 15k car has a 'story' unfortunately, the seller knows that, that's why he hasn't priced it higher.

I've had cars where you've had to tell a story about why the mileage is low, and, I've passed on 2 low mileage cars this year because this very reason.

I'd buy the 35k one. But give both a good look over and buy on overall condition.

All other things being equal I'd take the low miler. I have had cars that I have used very little and they have been faultless once checking the tyres are ok and the oil has beem changed. If its been garaged then it has been subjected to the elements and temperature changes less too.
