I seem to recall in Deep Impact that one of the lines said that the meteor hitting the earth would create a tidal wave several hundred metres high travelling at 1,000 mph. At that speed would it generate a sonic boom? Would portions of it boil-off due to air resistance?

A wave may be travelling at 1,000 mph but it does not mean that the water is travelling at that speed. A wave is a "form", not a movement of actual material.

That doesn't matter if the wave is in water, air or is electromagnetic.

It could be several hundred metres high, or travelling at 1000mph, but it couldn't do both at the same time.
