Second Car, up to £35k

Finally ready to replace the car I sold 2 years ago to fund a house move.
I’m struggling, I have quite an eclectic taste in cars and over the last few months I’ve been in many, many rabbit holes - researching, learning and often eventually talking myself out of cars given my findings.
Anyway;
Up to £35k.
Wife friendly - I’d have a 700bhp Evo, she’d refuse to get in it. This needs to be something we can holiday in, weekend away in etc...
Track friendly - doesn’t need to be a fire breather but something I can track once a year and have fun with.
Head turner.
Something I can get pretty involved in - tinkering, cleaning, modifying, showing, going to meets and events.
Appreciating or at least steady in value.
No bigger than a 2017 Alfa Guilia - my daily and that’s about the limits of my garage space.
Quite like the idea of a TVR, MK1/2 Escort (probably Cosworth YB engined, maybe a tuned pinto), E30 BMW, Porsche of some description?, E30 M3 or Escort Cosworth are probably out of budget really but definitely appeal.
Throw me some ideas.
I should add, I’m 6ft5” so Caterham, VX220, Exige etc are probably out of the question.
I should also add, I would be happy spending a third of my budget on a mint mk2 golf (example)

Some good idea guys. Particularly perked up at the Evora suggestion! They weren't on my radar.
GTR - I would love one but i think it'd be too tight in the single garage I have. Do we think a £35k GTR still has to depreciate for a while yet?
Corvette - Lovely but again, big old beast and not sure how i'd get on with LHD either.
S2000 and E36 M3 are cars i've looked into however I don't think the S2000 would be enough smiles per mile for a weekend car? A really mint M3 would tick alot of boxes though.
Boxster and Cayman don't rev me up much, maybe a Cayman R but looks to be £40k+ for a good one.
