I’m in charge of BBQ’ing for 20 guests on Saturday. Got some good quality Burgers and Sausages from the butcher.

I’ve also got a Kilo of lamb neck fillet and A load of chicken thighs which I hope to make some shish kebabs with.

Does anyone have any good marinade recipes? Could do them both in the same marinade or happy to have two different flavours.

Initial thoughts were a tikka for the chicken and maybe a Moroccan flavour for lamb or rosemary and garlic, but open to ideas.

Tikka marinade
3 tbl spoons yogurt
2 tbl spoons garlic & ginger paste
2 tbl spoons white vinegar
1 tsp chilli
1 tsp ground cumin
1 tsp tumeric

Mix, marinade. Best with skinless, boneless thighs.

Grill then brush with 3 parts olive oil/ 2 parts lemon juice/ 1 tsp garum masala

Simple Asian marinade, best for pork or chicken.

2 parts mirin/ 2 parts light soy sauce/ 1 part sesame oil.

Mix well, marinade, grill.

For the lamb:

piece of ginger grated
4 garlic cloves, crushed
1 tbsp each turmeric, garam masala and cumin seeds
1 tsp paprika
handful coriander leaves chopped
juice 1 lemon
150ml natural yogurt

Marinate overnight. Brush remaining marinade on as you cook.

For Chicken, slightly spicey, bbq sauce type marinade:

4 tbsp tomato ketchup
4 tbsp soft brown sugar
1 tbsp soy sauce

1 tbsp Worcestershire sauce
1 tbsp sweet chilli sauce
1/2 tsp paprika
