Remortgage on existing property

Hi all
Remortgage on current mortgage is currently going through and due to complete at the beginning of September.
Between starting the remortgage process and now, I’ve potentially found a new property that I wish to move to. It’s currently tenanted but a break clause in the contract means it’ll be available from the end of Jan 2019.
Given timescales, if I were to move, is the best option to:
a) Complete remortgage on current property and then get second mortgage for the additional borrowing required
b) Cancel existing remortgage, go onto SVR for the interim and start new mortgage process in full for new property.
