I'm sorry if I missed it, but just what is the mechanical part of the clutch operating system actually doing ?

Rather hard to follow that long description of what you've tried. If you connect a hose to the bleed nipple on the clutch slave and bring it up to a jar at the same height as the clutch fluid reservoir, crack open the bleed nipple and pump the clutch pedal you should be able to pump the contents of the reservoir into the jar. If you can't pump the pedal because it does not come back up, or you can pump the pedal but nothing comes out of the slave bleed nipple, you have a problem on the hydraulic side. If that doesn't work but you get some other behaviour, explain what happens and maybe somebody can guess what's causing it.

When you release the pedal the rod and piston inside the master cylinder return to the beginning of the stroke. At this point the piston seal is past a drilling which connects the cylinder to the reservoir. If the pushrod is too long then this will prevent the piston returning to the parked position and may give the symptoms you have.

A simple test would be to put two or three washers under the master cylinder fixings to space it out a bit. (this is for test purpose only)

It could be a simple as the carpets preventing correct travel of the pedal or the servo has failed in some way or the master cylinder is the wrong part.
