If you look at the embossing on the knife cover it says 'Almazan Kitchen'. a quick googling comes up with the following website.

The style of knife is called a Santoku

Its a Japanese knife designed for slicing, chopping and dicing. Great knives but a huge PITA to keep sharp as they blunt very easily.

You can get Chinese cleavers that'll do the same job for a fraction of the price.
I get it though. If he pulled out his generic plastic handled commercial chefs knife to make this video, it wouldn't look half as cool.

It's the whole outdoors, rustic old knife, sharpened on a whetstone, campfire cooking, kill your dinner/cut your hair/shave your face/chop firewood with my grandad's old knife, owned by 5 generations of slack jawed yocals look. Honestly think that knife is just too pointlessly high, why make your life more difficult?
Who cares if it's any good for the job.
