I’m looking to cook a beef cheek recipe next week, i’ve found this one so far but wondered should anyone have any new tried and tested recipes that you have cooked before?

This is the one I have that I would probably slow cook.

No tomatoes here though which I thought was a little odd?

I would sous vide them, ( I have an Anova Sous Vide), but slow cooker would be ideal to get them tender.

A burger near me was advertising them on their FB page. They’re based in Manchester City Centre and were charging £11 a kilo?

I don't have a specific recipe although I may have posted something relevant in the past. I braise in lots of good beef stock wine, sacrificial veg and herbs then allow to cool overnight, Remove and clean up the cheeks then reduce and pass the braising liquid, fortify if necessary to make a good sauce.

Serve that with some good mash laced with horseradish and good winter veg.

The Butcher’s Quarter on Tibb St. Got a single rib of beef from there recently and it was decent.

I just thought they were taking the piss a bit with the price of the beef cheeks given they were meat to be a cheap cut.

I got some ox tail from the Arndale Market last week too. Still think that’s a bit steep at £8 a kilo.

Cheers, thought it would be the NQ. Manchester city centre is crap for butcher's (number of, not quality). Will get some local rather than at work, NQ is a trek from Oxford Rd at lunch.

Any cut that gets popular goes up in price, beef cheeks seems to be one of them at the moment.

Thank you for the recipes. I've spoken to all of my local butchers and none sell the bloody things.

I've done them in a slow cooked tomato sauce with plenty of red wine. Bought fresh from the butchers counter in Waitrose.

Served with pasta it makes a good change from mince based sauces.

If you have a barbecue, smoking them slowly is really good.

Needs to be really long cook with temperature coming to round 200F for the collagen to melt

Then leave them to cool and set. Next day they can be sliced cold for sandwiches or sliced and fried with onions in butter

A local butcher near me ( has own abattoir with shop attached), does beef cheeks at £6.74 for orders less than 5kgs. Its £6.07 for orders above 5kgs.

I've just started a stew for this evening.

Went to Manchester Arndale Market to get some Oxtail. £8.99 a kilo. £15 spent there. They had beef check there which was £12.99 a kilo. I still think this prices are expensive given that these are meant to be cheaper cuts.

To bulk up the stew, I bought a small joint of brisket from Aldi which cost less than the oxtail and beef cheek per kilo!

That recipe is a classic slow beef braise recipe OP, it'll work well.

Make sure you get them larder trimmed, so they membrane has been removed (or do it yourself, but don't leave it on - otherwise it'll be tough)

Don't be tempted to cut them into 'normal' sized pieces, before you cook them, you'll be amazed how much they shrink when cooked. I normally cut them in half only.

I really wouldn't worry about slow cookers and sous vide, and all that nonsense, just brown them, put them in a casserole dish with the veg, stock, herbs, red wine etc and let them cook in the oven at about 140c for 3-4 hours.

You can hook them out with a slotted spoon and pinch them slightly, they should literally start to pull apart between your fingers when ready.

When they're cooked, take them out, and mash the veg into the liquid a bit, then reduce until you get a nice thick sauce. pass it through a sieve and pop the cheeks back in to reheat.

Delicious cut of meat.

Cheap cut, but getting more and more popular, plus it's that time of year!
