your Batch Cooking recipes please? here's my chick curry one
Discussion
Please share your recipes for batch cooking. I commute into London, and am tired of spending £10-£15 a day on breakfast and lunch. I can batch cook, and bring portions frozen or refrigerated in a flask to work and keep in the work fridge.
Also fantastic to have them in the freezer when you can't be arsed to cook.
My first attempt was a good success, got 15 portions out of it and tastes great.
20x freezer zip loc bags for storing portions individually after (you don't want one giant frozen block....)
1 cup vegetable oil
4 tsp salt
2 tsp cumin
2 tspblack pepper
2 tsp ground ginger
2 tsp coriander
2 tbsp curry powder
2tsp cayenne pepper
3/4 bulb of garlic, broken into cloves, deskinned and crushed (i use a proper garlic crusher)
2 bell peppers
3 courgettes
2x Potato
2 Aubergine
6x large chicken breasts
tin of chopped tomatoes
2x tin of coconut milk
Cut up veggies. I cut the potato into small chunks and cut the courgettes into thick (like 2cm) slices, otherwise potato would be too hard and courgettes gone to complete mush
heat oil in a giant pot and add garlic and other spices, until the garlic and spices are nicely fried.
Add all the veggies except the tin of tomatoes. Cook for 10-15 minutes, stirring frequently. Add water if necessary to keep mixture moist. When vegetables are tender, add coconut milk and tomatoes, and heat through.

Great recipe for a semi healthy chilli
Tin chopped toms
Tin Kidney beans
1 x whole onion
2 x carrots
1 x peppers
1 whole birds eye or scotch bonnet chilli (remove before eating)
Chilli powder (add to taste)
1 tbsp Cumin
1 tbsp Cinnamon
1 tbsp Brown sugar
1 tsp Worcester sauce
2/3 squares of dark chocolate
Boil some rice & add - microwaves really well..
You can also stick all of the above in a slow cooker on low, whack it on when you leave the house & dinner is ready when you get home.
