Had one of these pork chops in Cyprus recently. It was lovely.

Anyone know what type of chop / cut it is?

Well, in Cyprus it's called a "μπριζόλα", (vrizola), which translates as "Steak"!
I always ask for a "vrizola", but out of earshot they're dinosaur chops, AFAIC!

Isn't it just a regular pork chop with what would be the "spare rib" still attached?

Its a "normal" loin chop with the belly still attached. Not something you would find in the UK but any decent butcher could cut you a few if you gave them notice.

No idea what you would call it but describe it as above and you'll get what you want.

In Greece it's known as pancetta (πανσέτα), which as mentioned previously is a pork loin chop/pork belly combo.

I first saw them on Man vs Food in Puerto Rico - they seem to grill and deep fry it to produce something called "Chuleta Kan-Kan" It looks pretty epic.
