Just been to the butchers and got a lovely slab of smoked gammon to see us through xmas lick

Now I have poached in coke before, then crisped in the oven, that was decent.

But my go to recipe it to smother it all in honey and wholegrain mustard, stick some cloves in it, and roast it!

Anything I should be doing different?

Any must have recipes?

each to their own of course, but I only like boiled ham, so thats what I do, boil/poach it in water.

All that roasting, and cloves etc, just spoils it for me.

I appreciate I am probably in a minority on this though

I boil the ham for 45 mins (ish) in water with onions, carrots, cloves and thyme. Then remove, dry and roast at 180 until cooked (based on meat thermometer). Remove, wrap in foil and leave to cool.

Firm but succulent and tasty ham - lovely!

I'm doing one today. Firstly I'll boil in equal quantities of cider, apple juice and water, with some apples, cinnamon sticks and cloves thrown in. After that it's onto the Big Green Egg (tomorrow) for a cold smoke for 8 hours or so, and then finally a glaze and a light hot smoke before serving. It's a variation on this, and always gives amazing results:

Hmmm, seeing as Boxing Day is supposed to be dry - I might do this instead of letting the wife cook it indoors!

I did one a few years ago boiling it in orange and pineapple juice with star anise. Then finished in the oven with marmalade glaze.

I think it was a hairy bikers recipe, it was marvelous and got quite a few remarks from family and friends.

Put it in a lidded casserole dish. Pour a couple of tins of Magners over it and pop it in the over at 190’c

1.5kg joint is about 1h35m

Was just talking about this down the pub today.

Soak in water for 24 hrs, changing water often. Boil with onion/leek/carrot. Cool, and then score the fat, cover in English mustard, muscavado sugar mixed with ginger marmalade and bake .....

Well we did the ham today, and I’ll be honest, stuck to the honey and mustard route, but did follow this recipe, swapping the OJ for cider

Best gammon yet, it’s delicious!

Mine is currently in the oven with the maple syrup and mustard glaze being done.

I did the BBC one a few posts up, did it last year too; cooked in coke for 2 and a bit hours and finished off in the oven with a maple syrup and mustard glaze.

Slow cooker in coke for about 5 hours.
Then smother in either marmalade/treacle or mustard and roast until it looks right.

It’s a big gammon. I may cut it in half and do both.

Never thought about doing it in the slow cooker, however I'm not sure it would have fitted in; if it did fit it would have been very tight for any liquid to get in there.

Just looked in the oven - there's a massive ham in there now, the display shows 80C and it's been in there for coming up to 18 hours yikes

Wifey has just told me it's been smothered in black treacle and it's shortly going to be uncovered and coated in demerera sugar and mustard prior to roasting. Photo to follow ....................
