Variation 1 of the season: turkey bon-bons. Diversion from the main activity. Cut off the wings and roast them (with seasoning) until they’re falling apart. Let them rest then shred the meat with your fingers, adding salt and pepper on the way. Once removed from the bone, chop really finely and squeeze into balls. (Not your balls, obvs). Then place in the freezer for 15 mins to firm up.

In the meantime dry some stale bread out in the oven and whizz it in the food processor to make breadcrumbs. Remove the turkey balls from the fridge, roll them in beaten egg and then coat in breadcrumbs.

Heat some sunflower oil in a small saucepan until pretty flippin’ hot and fry the little monkeys for 2-3 mins.

Eat. Yum. Veh veh crunchy.
