Yes of course mate, can be any colour you like.But depending on how they're making the sign (I'd imagine it would be plotted vinyl applied to the acrylic), then the colour of the artwork is neither here no there as they would just cut it using the red vinyl. I would supply to you in EPS, PDF and any JPEG or PNG files that need.

Any automatic image trace is awful, even more so when that vector is going to be used to plot for a vinyl graphic, maybe a trace with a tidy up would suffice but you'll never beat a manual trace for curve accuracy and minimum nodes.at the quality you have it comes out as below,

If you can get it done proper on Fiverr for £5 then snap it up. I wouldn't charge any less than an hours rate for this.
