More Confused Than Usual

i've been trying to trace the threads to answer a couple of questions. firstly, what's the optimum operating temp for a grif 5.0? secondly is it a charecteristic of this engine to be 'lumpy' under 1500-1700 revs?

My griff used to run at at about 90 degrees normal then on really hot days stuck in traffic it would creep up to 110 degrees.
Just before i took the car to France in the summer my rad got a leak so i put it in for a new rad.
The garage put a new T.V.R. full flow rad on for me,now it sits great min 80 degrees max 95 whatever the wheather. If you need spec of rad and cost please let me know.
