Might be a stupid question, but due to my lack of bendyness I can't quite see how the throttle cable fits into to the top of the throttle pedal. I assume it must pull slack and slide out in one direction or another but can't quite crane my neck round to see. Any help & tips much appreciated.

These pictures might help. Note the throttle stop that you may need to adjust afterwards.
If you really can't get into that tight space then you will find it much easier with the seat out (and don't forget to raise the steering wheel).

In this picture you can see the crimp on the cable end and a ferrule it passes through. The ferrule is fitted into the end of the pedal shaft and it is not uncommon for the end of the pedal shaft to be crimped down onto the ferrule making it very difficult to get out.
Being equally non bendy I normally have to remove the whole pedal first to release the cable.
Also in the picture is the white plastic fitting at the end of the cable outer. This fits into a grommet in the cable mounting bracket and can also be a pig to get out. Give it a squirt of WD40 (other release oils are available).



When you come to do the cable adjustment get a piece of wood and jamb the pedal to the stop. Then adjust the cable until the throttle butterfly is 'fully open but not quite'. This ensure you will not break a cable when you go 'pedal to metal'. Release the wood and check the closed throttle position of the pedal suits you. If it does not then you will have to start playing with the throttle stop shown in the other pictures but remember the full throttle adjustment is the most important.
We see so many of these incorrectly adjusted it is now a listed item on our service schedule.

Thanks chaps. much appreciated. Went with the Steve route by removing throttle pedal. Finish the job in the week. Noticed replacement cable doesn't have the ferrule for the throttle pedal fitting, just the crimped on end.

It looks like someone has cut the end off the pedal arm and drilled/welded the collar in on mine. Thankfully I am swapping out the pedals for new alloy ones with a new arm. But this means a while new cable?
