The wife has a GTS with some rather nice looking carbon bucket seats, the problem is they have got a bit uncomfortable for me due to having a slightly bigger rear end ! She is also having issues getting in and out with here ageing knee.
Do any know if I can (assuming I can find some) bolt in some more “normal” seats?
My concerns are I have seen airbags and all sort of electronic controls in some.

A swap should be possible. If they're heated you may need to swap for similarly heated seats to ensure all electrics work without fault or error messages.

They are fixed position other than front and back manually. My point was the ones I have seen have airbags and motors in them.
I supposed my question would be is did they make a Cayman with manual seats and no airbags in them. If they do have air bags I supposed I don’t have to plug them in.
Your bucket seats have airbags, so I guess they must have an electric supply. In which case, you can retrofit any non-heated seats. Two-way electric Sports Seats or Sports Seats Plus would fit the bill best. There are 18-way electric Adaptive seats but they have additional controls on the door card I think so should be avoided.
