Thought it would be good to have a Keto thread dedicated to your favourite meals, rather than just the general all encompassing thread in Health matters.

Ingredients and a rough guide on how to make, where needed, would be beneficial to those of us like me, who struggle finding a variety of tasty keto friendly meals.

I have tried making pizza bases and chocolate mug cake using coconut flour, and the result was disgusting, so if there is anyone who knows how to make these in a way that doesn't taste completely rank I would be happy to hear it.

I watched the link above to create the pizza base, however i put my own toppings and sauce on top.

My toppings were a two grounded beef burgers, a can of chopped tomatoes, mixed with Italian herbs for the sauce.
Sliced onions, chopped olives, chopped frankfurter, spinach, mozzarella balls (so that they can melt and spread), lots of grated cheddar cheese on a number of layers, chopped mushrooms and ham.

The only issue i have is that sometimes i can't get the base to stay together, but it doesn't taste like st and it's really filling.
One cauliflower will make produce a base the size of a standard baking tray.

For a start, some of my go to are:

Fried chicken using pork scratchings, the light airy type not the fatty ones.
Cauliflower pure.
US style sausage gravy thickened with Xantham gum
Meatloaf

Had to look this up. What a great idea. Chuck in some garlic powder, Cayenne and Paprika and it should taste awesome, another one to try this week.

Only been following this for a month or so. Miss a crisps/Nachos most.
So I make ‘chips’ for dipping and snacking and to use as Taco Shells. Small handful of grated cheddar on a side plate microwaved for two minutes. Removed and peeled off (hang over the side of a mug or bowl to shape for a Taco) wait until cooled and hard and break to shape.

Do you not like the pork scratchings? Traded the crisp for them, seems to be a good crunchy salty alternative.

Just tried this as I had enough Cauli in, but used Extra mature Cheddar due to no Parmesan.

Turned out well for a first try. Base holds together nicely, if a little floppy, could do with being slightly thicker next time.

Added some Cayenne and tabasco to the pizza sauce to give it a slight kick. Topped with Chorizo, Ham, Pepper, Onion, Cheddar and Stilton. Tastes amazing. NOM.

I would go as far as to say it is better than pizza made with regular flour base, so many thanks for the link to that vid bunchofkeys

I seem to have more sustenance in my cupboards and fridge than ever before and spending less money! Yet I’m hardly ever hungry :/

Tonight I’ve cooked Lemon Butter Chicken, for not the first time. It’s a great recipe, all purchased from Lidl/Aldi so a bargain and so tasty. I like not missing out on ‘themed’ nights. Others will have this with Rice but I’ll have an extra Thigh/Spinach

And i would agree, it's better than a normal pizza. I can't eat as much, as the base is a lot heavier than normal dough, so i fill up quicker.
Just more delicious pizza for later.

One I've been meaning to try:

A quick n easy one which was a go-to dinner when I was on keto:

Lazy Lamb Burgers

Chuck 500g of mince in a bowl, add an egg yolk and mix about.

Then add desired levels of dried tomato and garlic granules, parsley, chilli flakes and black pepper. Turn into how many patties you want.

Foil on baking tray, a touch of salt down where you'll place the patties. Cook for 15 mins at 200c, turn over and add a greater level of salt to the other side. Another 15 mins if you don't want them pink in the middle. These cooking times are based on two, beastly burgers, so, erm, yeah... adjust as needed. biggrin

Lamb mince can be a bugger for ideal burgers if using an oven, having it a touch pink if that's your thing without the excess fat and the meh texture that goes with it is a tricky balance, but doing the salting in the aforementioned way should take care of it.

Or of course don't be lazy and use the grill. hehe
