I've just bought a couple of whole sea bass, does anyone have any cooking suggestions? I fancy something different, normally I fillet and fry them skin side down, or steam with lemon and herbs.

Thanks :)

Don't chav girls usually favour a battered cod eaten alfresco not far from where it was fried?

Yep, in rock salt.

Stuff it with herbs and lemon, put a load of rock salt in a pan, put the fish in, cover it with salt sling in the oven.

Job done.

Yep, doesnt end up salty at all.

I absolutely detest salt on anything and can taste it in cooking and was pleasantly suprised by this.

De-scale, score both sides, stuff with fresh thyme.
squeeze lemon over and coat with olive oil and sea salt. Bake in the oven for about 12 minuits then grill for a further eight. Serve with wedges of lemon.

Bugger, that would mean I'd have to go out again, I've got rock salt, but not that much.

Any other suggestions?

Get a Shark Tenor and Angel fish Suprano and invite the friends round for a recital?

Grill it - with a few herbs and blue cheese topping, simple and easy (much like yours truly).

Herbs and lemon as before, inside the gut cavity.

Few slices of apple and goodly amount of butter (ounce or so) on some foil.

Sling fish in foil and make a foil pasty, bung in oven.

Job done, a different way.

Having engaged my brain and realised getting some more salt isn't going to be that tricky I will give the salt baked method a try.

Thanks guys, I'll think of you when I pour the Poully Fuisse later.

However you cook it, make sure it's on a bed of mash potatoe...

I think that you've been watching a bit too much Jamie Oliver Plotloss, far too many refernces to bunging and slinging for my liking, you'll be sliding down spiral staircases and telling us how much you love your nan next.......

Cut me to the core why dont you

I was using the slap dash approach to cookery for before that mere pretender Oliver.

You'd never find a recipe for fish finger sandwiches in a book of mine!

Harumph!

Also, I'd look bloody ridiculous on a moped, I'm built for Range Rovers...

I'm going to do it with Jersey Royals, lightly crushed with a glug of extra virgin olive oil.
