Utter betrayal. What would you do?

So as I've mentioned on here before I run a club night, been doing it for a while did one last night.
There's a crew that often help out with the second room and consists of a guy who is a bit of a loon who I find both hilarious and rather cool in his own unique way and a lass I've been friends with for over 7 years. For the first time, I'd agreed we'd do this one together - split the costs and the profits.
We were sharing the door duty. Taking cash off the punters as they come in and put it in the till. A position of serious trust, but knowing these guys for as long as I have-especially the girl. I was ok with that - I mean, we're going to be splitting any profits anyway.
Around 3am a bouncer I've known for well over ten years and has got me out of a fair few scrapes takes me to one side and has a bit of an awkward conversation with me. As he walked into the doorway to get outside he saw the lass take some cash out of the till and stuff it down her bra.
Now I know she is skint, but we've been mates for a long time and the other guy who I was working with has known her far longer (15 years plus). Never known her to do this before but it was only the eagle-eyed bouncer who noticed what she was up to. Fortunately, there is video evidence to back it up.

Notice the first guy walking through the door, right after she looks behind to make sure no one is looking, right after that the bouncer walks through the door and saw her stuff cash from the till in her bra.
She clearly didn't notice there's a camera pointing right at her at this point too.
I told her mate who was going back to hers, he's obviously pretty hurt by this as well as me. Decided against taking it up with her there and then to avoid a drunken bust-up in the club. Less bothered by the cash and more but the utter betrayal.

Yea, I've sent over a copy of the vid to her mate who's going to take it up with her.
The night finished at 7am and needed to get back home to sleep.
We're both utterly gutted but at end of the night when everyone is pissed was not to time to bring it up.
Clearly, I can't work with her again.
Just sucks that she's thrown many years of friendship down the toilet for £100 quid or whatever it was.

She’ll either brazen it out, apologise profusely or ignore you.

Still, the police is a step too far.
Actually, feel sorry for the girl, it's a small old scene and no doubt this will get out. No one is going to trust her after this.
The cash isn't really a big deal, we ended up making money anyway.
She has a pretty crap job and is really just scraping by pay cheque to pay cheque. I do alright for myself and often give her a bit of extra cash to help her out when she helps out with nights.
Feel like an utter mug.

This....why are any of the 3 of you getting pissed while working? Surely this is at least partly to blame for her not thinking through the consequences of her actions!
