Left field option for you... 'The Clink'
Went there over Easter, not my choice, but it was interesting. Staffed by prisoners at HMP Cardiff. The food was pretty decent.
Big disclaimer - no alcohol.
Also ate at 'I Giardini Di Sorrento' that weekend. Italian. The food was excellent!

I'm a bit out of the loop on the dining scene in Cardiff these days (not lived there for a fair few years), but I've heard great things about https://asador44.co.uk
Potted Pig was good last time I went (6 years ago now!).
A bit out of town up in Canton, but if you want Chinese, then the Happy Gathering is good.
12 pints and a trip to Dorothy's or Charleston's isn't a bad shout though..!

Of the places I'd look to try if I was to blow the work budget, Potted Pig has been mentioned and Park House would be the other.
Another to consider might be Chapel 1877, which was very good the last time I ate there.
If looking for a more typical Indian meal, the Mango House remains the best I've found in the city centre, but it's usually packed out when there's any big sporting event on..
