Off out at the weekend, so need to make up a picnic.

Want to make some nice sandwiches.

Give me some good ideas. Was thinking a BLT maybe on a crusty granary/seedy rolls.


No real limitations other than they'll be in a rusksack all morning and not in a cool box so cant be too delicate in the heat.

Beef, coleslaw and rocket is a personal fave of mine.

Granary always.

Cut a loaf in half, and scoop out most of the bread.

Oven dry some halved cherry tomatoes (on baking parchment - about 2 hours at 100deg).

Slice some mozzarella, and either prosciutto or salami.

Get some rocket, EVOO, parmesan or grana padano and seasoning. Maybe some pesto too.

Layer each ingredient into the hollow loaf, wrap in cling film and stack a some heavy books on top of it for a few hours so it flattens.

Unwrap, slice, eat.

Finely grated cheddar cheese / onion / mayo / chive is hard to beat

Cheap white bread, the 20p a loaf stuff with butter. Tinned tuna mixed with a bit of malt vinegar, salt and black pepper. Leave to soak into the bread before eating.

Why not buy a small cool bag. Most supermarkets sell them.

If you are taking a baguette, the ones to keep wine cool would work.

Pitta, humus, falafels, salad. Take all separately and assemble on site.

The Shooters sandwich looks epic, although I do feel obliged to point out that shooting cows is really not on.

I doubt the heat would make it much worse laugh

Kept it simple with corned beef in the end.

But made an error by including a slice of tomato - ended up with soggy patches on the bread roll.
