My GTR runs too hot!

Hey Guys, I recently took delivery of a new GTR the other week. I’m not much of a mechanic so im going to need some help. The GTR has a stroked chevy 383, and was built by a hot rod shop here in the US. Every time I start the car the water temp starts shooting up 180…. 190…. Stays here for a bit then goes to 195.. 200 very slowly. Once it gets any higher it stalls. I only know this because I took the car to the auto cross (parking lot racing) and it died halfway through my run. Now I cant tell if the radiator is doing its job because the car is so loud. How do you guys keep the Ultima cool? Do you think my cooling system isn’t grounded properly? Some help would be great

Thanks! this is very helpful. The shop just told me that these engines run 190-200 degrees on idle and can run up to 230 fine...(I thought over 200 was very bad) I guess my battery is almoast dead and I'm thinking its a heat issue.(I'm also probably not used to having a large heat producing engine right behind me) I'm buying a battery maintainer and Ill post my results.

Is it carburated? If so I would guess that fuel starvation from high cornering or braking forces caused the engine to stall.
