VW Up! Stop/Start - Battery

Morning all
Looking for some advice please. I have a wee VW Up! 2012 with Bluemotion Stop/Start.
It requires a new battery so have been on the hunt but noticed differences in amps. I didn't realise batteries are specific to stop/start cars until I looked into this.
Some are 680 / 640 / 520. Any idea which one I should go with? Seems more choices with 520.
Also if I fit this myself can I disconnect everything completely or will this bugger things up and require resets which I cant do without the correct software? I noticed a video where the 'computer' remained connected to an alternative battery while the battery was changed.
