Can someone recommend an online cookery course that I can follow?

My current state: I don't really bother about food, to me it is just fuel to keep me going. Of course I love nice food and would rather eat good rather than bad and eat at restaurants once or twice a week. Problem is if left to my own devices I will make a sandwich or beans on toast or similar, the time and effort to make something better is not worth it to me. I can follow recipes and cook proper meals but it is all a bit monkey see monkey do and everything is copied exactly. The thought of cooking for the kids fills me with dread.

What I want to achieve: Some people can look in the cupboard and fridge and instantly decide on a meal based on what they have, even if missing an ingredient or two. They then take the ingredients and knock up lovely food easily and quickly without measuring everything and following strict procedures. I want to be able to do this.

Realistically I know that isn't learned quickly and that experience and talent is everything, both of which I am sorely lacking. I don't aspire to make gourmet food, just nice healthy meals. Not too bothered about styles of food, British, Asian, European, meat, veggie would all be fine.

Can anyone recommend me an online course to help this, probably better for me than books? Thanks

To expand on this: Partly because he cooks really tasty meals that can be knocked up in a short time but also you'll learn loads of simplified techniques. For instance, perfect julienne carrots might be ace, but they're just as tasty as grated carrots!

Also worth looking at a guy called 'Binging with Babish'. Mostly recreates food from movies and TV and stuff but has a separate channel called 'Basics With Babish' where he goes through basics like knife skills, various different cooking techniques and loads of basic recipes too. Each of those basics recipes is accompanied by an additional live cook along video too so you can see it in real time.

Do you want a course or recipes?

you keep saying course, so i can't help but think of Rouxbe. their videos are rather old, but they will teach you about all sorts of techniques and how to cook things (and how not to).

i also suggest america's test kitchen. they'll teach you recipes, whats good whats bad. but they will also teach you techniques in addition to doing review comparisons of equipment at a wide price range.
