I beleive you can use the large drum style ones

You'll go through a lot less bits of sanding paper if you get rid of the old gunk first, no idea of the best solution for this

As it's quite nice your hall, I'd consider getting a floor expert in to do it. Won't cost much more than the kit hire

A mate of mine had these guys to do his lounge, well worth getting a quote IMHO

I've done a few of floors using the big drum sanders.

It's quite easy although very dusty work!
Make sure you get loads of sandpaper. You will use a lot!
You can always credit back what you don't use.

A good wash down with a load of meths should remove all grease there with little effort - be sure to use loads of meths though, as otherwise you end up just moving the dirt around instead of dissolving it.

Drum sander would be OK I think. Make sure the bar that retains the sanding sheets is in good condition and that you wrap them round the drum nice and tight, otherwise you can waste loads of them. Sticking up nails that you wouldn't otherwise notice are also bad news, though I don't suppose you have many of those in a parquet floor.

Is varnish the appropriate finish for parquet? I'm pretty sure it's supposed to be some sort of wax finish.

ETA: you might want an orbital sander as well for finishing off / getting into the edges.
