What tyres for Amarok/pickup

I’ve just bought a VW Amarok which has come with Pirelli scorpion verde all season tyres on it.
I’m looking for some opinions on tyres for pickups. Vast majority of my driving is normal roads but I do go up and down the odd farm track a couple times a month- in winter they can be slippy. I tow a caravan a handful of times a year which can be on wet muddy grass pitches. My main hobby is going up the mountains- Munro bagging- so having a tyre that can get through snow and in the odd occasion go off road is ideal. Ideally not too noisy 🙄.
My previous freelander 2 had Michelin latitude cross tyres and they were phenomenal although they are quite expensive but unfortunately they don’t come in 255/55/19.
So the tyre needs to:
Good on road
Good in snow/wet muddy grass
Relatively refined/quiet(ish)
Ideally £100-150max a tyre.
Basically a good tyre that will get me out of trouble but won’t slide off road at first wet corner or feel like it’s on caterpillars
So do I stick with the Pirelli’s? Wrangler? Duratracs? Bfgoodrich? General grabber? Etc etc

No tyre that is very good for mostly road is going to be any good off road. All of the all terrain tyres are compromised on and off road, but are a reasonable middle ground. If I was mainly driving on road then I'd want road tyres.
I have AT tyres (Cooper Discoverer AT2) on my Jeep and it isn't particularly pleasant on roads especially at higher speeds. They do alright off road and alright on road. But there are better tyres for either surface by a huge margin.

I always run BF Goodrich A/Ts on every 4x4 I've ever had, and while they are a little noisy compared to a more road-based tyre, I have found them to be superb in all weather conditions.
Then again, I never did throw my Defender or Discovery around, but I can't say I ever experienced understeer or anything like that.
Also, the tyres will last for 30-50k miles.. They're bloody impressive but a little more expensive than most.

I’ve noticed in the USA everyone bangs on about the Goodyear wrangler duratrec but here in the uk ( north east Scotland where I am ) it’s hard to find any reviews/ comments on them. They seem to be relatively reasonably priced and they are available in 255/55/19
Bfgoodrich seems to be glowing reviews everywhere I read- here in the uk.

Copper AT3 4S, youtube it to see what they are capable off, sounds perfect for your need however I don't think they do your size, but most people change to smaller wheels and larger tyres if they are serious about having the need.
Yeah there is quite a lot of brands who don’t do my size. I just want a tyre to stay on all year- can’t be arsed changing wheels around & I like the alloys that are on. I’ve ran Goodyear vector 4seasons for years on my previous cars they were awesome but really expensive for the amarok!

I ran AT2’s on my Land Cruiser. Excellent in the snow. Fine on the motorway as well, when I sold the vehicle those tyres had done over 100K miles and had plenty of life left in them. I now have AT3s (they replaced the now defunct AT2s) on my van and the tread pattern and number is sipes (for snow) are very similar, but the AT3s are effectively silent. They don’t come in 255/55/19 which is a painOP, go for Grabber AT3’s.
The duratracs look best value but maybe too off road bias?
