It left my originals alone but i think you can choose in the options, how long it takes will very much depend on the speed of your computer.

Open iTunes check that your preferences are set to what you want BEFORE you drop your MP3 into the window (i.e. you may not want iTunes to move/copy all your MP3s into its own music folder and you may not want your iPod to sync automatically when it is connected). The MP3s will be listed by whatever MP tags you've given them. No conversion required, unless you want to re-convert them.
Then just connect your iPod and drag any file you want from the iTunes library window to the iPod entry on the left. The iPod splits (doesn't do any conversion) the file and puts it into its own directory structure (something to do with file sizes required for seamless play and optimised disc access).
