Note a PCGB trackday on 15 June. Would I, PCGB member, be able to get in to spectate easily as at Castle Coombe?

No probs to spectate, if you take your membership card along and find Steve Kevlin (he runs pcgb trackdays) he may be able fix you up with a few passenger laps to get the feel of things, you will have to sign the usual indemnities etc....
They are correctly quite strict on such things.
