The Great Producers.
Discussion
I'll start with Phil Ramone
The name on some of the most iconic recordings, Still Crazy After All These Years for Paul Simon, Billy Joel's The Stranger, Frank's Duets comeback albums, recording Marilyn Monroe's Happy Birthday to JFK.
A much missed man.

The problem with this is that
1. It shows your age.
2. It shows what you listened to.
So with those excuses out of the way.
Robert "Mutt" Lange
In the old days before electronics I guess Baron Gottfried van Swieten was a "producer" of sorts. Certainly the end results from his interactions was jolly good.

I agree about Phil Ramone - he had a very diverse career. I doubt there's a definitive answer as to the best as it's so tied to the artist and the material. I can only list producers of some of my favourite albums:
Phil Spector
Arif Mardin
Tony Visconti
Daniel Lanois, especially in collaboration with Brian Eno
Glyn Johns
Giorgio Moroder
Hugh Padgham
Rhett Davies
Bob Ezrin
Steve Lillywhite
