Help for birthday gift ideas for wife

We've been married for 30 years and my wife has everything I can imagine she wants.
She never talks about wanting anything and at Christmas, I fell on what turned out to be a great idea - a Fitbit health monitor watch thing. She loves it and is her favourite possession.
It's now coming to Birthday time and I've got a surprise for her as we're doing indoor skydiving during the day and a Japanese restaurant for the evening (I hate Japanese but will go with it for one night).
The problem is, I've no idea what to get her as a gift.
We limit gift values to £100 these days as otherwise she ends up spending crazy money on me.
She's got all the shoes and boots she could want - her words.
Clothes - I can never get it right
Jewellery - exceeds £100
Car stuff - she's got everything
Perfume - stocked up for life
Kitchen things - not got any more space for stuff
Cleaning things - she never seems to appreciate
Bedroom things - she's got me
Technology - Got new laptop, iPad, phone, ereader and Fitbit all in last 12 months
Hobbies - Got CNC card cutter, 3D printer, lamps and crafting tools, walking equipment, outdoor clothing - all got
I've even resorted to asking her - is there anything she wants and the response was "I can't think of anything"
One Christmas, I got away with not getting anything but that made me feel crap. In fairness, I was in the ICU in hospital at the time but some would say that's not an excuse.
If after 30 years of marriage, I can't think of anything for her, maybe the best thing would be a subscription to a dating site but I don't think she'd appreciate it.
Any help would be appreciated.

Exactly the same thoughts myself prompted by an opportunity tomorrow to grab something for Mrs21's birthday in a few months time.
What about a nice picture or painting she might like?
Few years back I bought her a leather work day where she made a belt for my birthday the following month. Nearly amputated her thumb in the process so the following year I bought her a lingerie making course for Valentines... that did not go down well..

Some great ideas so far.
She was going to get wine tasting for me but for one reason or another it didn't happen - great idea.
Cooking - great again, not thought of that one.
Divorce - don't forget the £100 limit.
Spa day - she's not into those.
Ironing board - I'd thought of one of those commercial ironing things bit their too big and above budget

Evening pottery - worth looking into.

She's also done the zipwire thing in North Wales - great fun. Worth doing if anyone is thinking about it but I suggested it to a neighbour and when he came back he told me I was a b
d! Not sure why.
