Is it the meat or the fact that it has a skin??
The skin. You know a sausage for what it is the moment you see it (and before being told its a veggie one!

according to brainydictionary.com
"An article of food consisting of meat (esp. pork) minced and highly seasoned, and inclosed in a cylindrical case or skin usually made of the prepared intestine of some animal"
Natural skins are usually sheeps intestine (bit like the first jonnies iirc)
Yes it is a weird question, but it is amazing how the conversation can get diverse with the aid of alcohol!
The reason being is that a burger made from sausage meat wouldnt be called a sausage burger, because I said it had to have a skin on it to be called a sausage.
And I guess that according to the brainy dictionary you do
