There are a multitude of reasons, books have been written about them.One reason that cropped up in a (IIRC) Nick Hornby book is that it gives the participants chance to re-invent themselves, to be with somebody who hasn't seen them at their worst or their most vulnerable in the way in which long term partners will have.

My mate is good looking, earns a fortune, has a big house with a fit wife and couple of kids.
A few years back started an affair with a girl in the office (her in her 20s, him almost 40). From what he told me, she was absolute filth, and very keen on being taken up the OXO tower. However, "crazy in the bed, crazy in the head" - she had a lot of mental health/alcohol issues.
Anyway, on and off it went on for a couple of years, then the girl started talking about him leaving his wife, which he had no intention of doing. She then went full mental, and threatened to tell his wife - and so he decided he'd have to first.
Predictably the wife wasn't thrilled... but heres where it gets weird. You'd expect he'd now be divorced with her having taken the house.
In fact, while the next year was pretty tense, with lots of arguments and accusations, he said his wife became absolutely insatiable, and they'd never had so much sex!
A couple of years on, and his relationship with his wife is great - in fact, he says better than it was before. I think hes learnt his lesson too.
Im not advocating that everyone goes out and has an affair and expects the same result - he is an incredibly jammy sod generally. He could fall into a box of dicks and come out sucking tits.

I've got a mate like this, he's been like it all his adult life. 47 now, has all the trappings, but can't resist the thrill of the chase, including with a couple of much younger girls at his workplace. My mate is good looking, earns a fortune, has a big house with a fit wife and couple of kids.

It's actually caught him out because one of them threatened to take a case of sexual harassment to his employer, chairman of a well know national company. Said chairman smoothed it all over with a pay-off to the aggrieved but now has 'a dossier' on my pal, he is now beholden to him. A few years ago my pal threatened to leave, his boss made it quite clear that if he did so then he would have no qualms about letting his wife know the contents of said dossier.
That shocked him into playing happy families for a while, but I'm sure if given the chance of a knee-trembler on a night out he'd go for it.
But yeah, Covid19 could be interesting for people forced to self-isolate, if they have some, ahem, 'away fixtures' pencilled in!

I've seen similar. The wife either decides to ditch them or decides to 'fight' for her man and puts in the effort to do so. In fact, while the next year was pretty tense, with lots of arguments and accusations, he said his wife became absolutely insatiable, and they'd never had so much sex!
