Beef rump heart - what to do?

I’ve taken delivery of a 2.9kg rump heart but a little unsure what to do with it. Obviously I’m going to portion and freeze, but what kind of portions? Hopefully the wisdom of PH can be of assistance!

This is where youtube comes in, several "how-to's".

I'd go for steaks and a roasting joint.

I did take a look at some videos but was looking for some recommendations of the end result? What are the steaks and roasting joint likely to be like? Is it worth using some for stewing?

I'd have a go at some nice thick steaks, reverse seared.

Too lean / not gristly enough for stewing.

IMHO.

As MC says, probably far too lean for slow cooking. It is the centre cut from a rump after all. Best for steaks and/or a fast roast depending on exactly how it has been cut.
