Bought 2 whole fish (sea bass and sea bream) from Waitrose yesterday only to discover, when I went to cook them, that neither fish had been gutted. This is the first time I've purchased a whole fish, but I would've thought the fishmonger would've at least warned me the fish wasn't gutted and offered to do it?

That's really bad news hygiene-wise.
All fish should be gutted and cleaned before being sold, unless we're talking about something like whitebait.

I had this recently and they asked me if I wanted it gutted at the counter.

Maybe they're showing off how fresh it is if they can stand behind that

Amazed they've kept the open counters open! - most other supermarkets closed them to focus their teams on essentials replenishment (aside from the potential hygiene risk of open counters).

Recently was probably pre lockdown. The concept of time is very blurry at the moment.

All retail fish is normally fully prepped, gutted, scaled etc Sounds like they ballsed up. I'd ping off an email to raise the point if only to make them aware.

It's actually a common scam. There are teams of fraudsters who take a mobile fish counter into the corner of a supermarket and start selling fresh and frozen fish, none of which has been gutted.
They often operate for several hours before being noticed by the store security teams. The giveaway is that their name badges are never on the correct font for the store.

I'd have thought the give away is they ask you to pay at the counter not at the till

That is also why the fish you see on the counter are normally under the UK minimum catch size limit too.

Whoever is selling the Fish is still charging Premium Rate for Guts, Fins and Heads !
If its a big Cod, thats 33% of its weight!

Our Tescos, sell nearly all their fish whole. AS my cat doesnt like fresh fisheads/guts I ask them to clean it for me.
