Afternoon PH,
I have one of those to cook for dinner today; https://www.donaldrussell.com/thick-cut-pork-chop-... and was wondering how you'd cook one?
I have an oven, a stove top and a microwave
Sadly no BBQ which is a school boy error!

Pan on the stove until really hot.
Season chops
With tongs hold
The chops in pan, and render some of the white fat.
Seal both sides of chops until a nice golden colour.
Remove from heat, add some hard herbs, Rosemary,thyme, bay ect, few unpeeled cloves of garlic, 2 apples cut in half, big knob of butter
Place in a hot oven, cooked until the core temp of the pork is over 65. 20ish mins?, maybe baste a couple of time whilst cooking.
Once cooked, remove chops from pan and allow to rest somewhere warm for ten mins.
Remove skin and core from cooked apple, bash up
For a ghetto apple sauce.
Place rested chop on plate with a large scoop of apple sauce.
BINGO.

A lot depends on the oven temp (I'd go 160), you may want to give the apples etc a head start in the oven as the pork will cook quicker than you think. I'd also go a little under 65, maybe 60 at most then rest. Crispy fat and outer, medium-well centre.
Another time. Try brining first as well.

Homemade chips were good!

Lean pork has a very small window before going overcooked. As you can now safely I tend to go for slightly under and let it rest a while. I would also say a decent thermometer is a lifesaver
