Without getting obsessively wierd like some of the reddit knife sharpening forums.

How sharp are your knives?

Spent 40 minutes regrinding my workhorse so it passes the grape test.

If I do one a day it I might just survive lockdown spin

You've opened up a can of worms that will keep us merrily entertained, thanks Tony !

It goes in there with

1. What knife set should I buy?
2. What frying pan.?
3. How to cook a steak

for differences of opinion.

smile

Just before the mad rush, what do you use ?

PS What is your workhorse ??? 5 inch cooks knife from Germany ? This is like trying to guess a car from a weird angle shot.

Well lets hope this stays semi on topic at least!

My daily beater is an F.Dick which lives in the drawer with everything else, probably why it needs resharpening so often frown

All the other nice knives are reserved on a rack for Mrs21.

I was also bored enough to start sharpening my knives, which I know was long overdue. I thought it would be a quick job, as I didn't think there were too bad, well apart from the small pairing knife which my mum solely used when she visited and was blunt as hell. I only managed 3 knives in 1 1/2 hours, as all need a regrind, with the worst needed a coarse stone to bring it back so took up most of that time.

Waiting for a rainy day when I am bored to continue with the rest that need doing.

Yep, suspect it will be the weekend before I tackle another.

I’ve been planning to sharpen my knives recently. Can anyone recommend the best equipment for this; stone, oil, etc.

Preferably from somewhere that is still delivering

Q. How sharp are your (kitchen) knives?

A. Very. I sharpened all mine (with a steel) first week of lockdown. I was bored.

Only took 24hrs before the wife inflicted a deep cut on her finger. Of course, it was my fault!

Thing is I am working from home so don't have huge amount of free time to catch up on stuff or I would give this a go

I bought that anysharp earlier this year, glad I did...whilst at the same time not..

makes my knives very sharp. but makes me underestimate how easily it slices through veg, so many times I've ended up cutting myself. (but when it was blunt it wouldnt cut me). It's been afew weeks since ive cut myself accidentally so all is well.

I have one fairly similar to this that i bought in japan.

https://www.amazon.co.uk/Minosharp-Plus-Ceramic-Wa...

Does a pretty decent job. The knife shop that I bought some japanese knives from uses tomatoes for their test, and its remarkable. This doesn't get them that sharp, but more than good enough for what I need.

I went down the Japanese wet stone route from another thread. Too much faff for me in the end.

The AnySharp thing does the job for me and that lasts for a decent time with just using a steel to hone it every so often, and I'm using just a £4 knife from Lidl.

I have never heard of the grape or tomato cutting test for a knife but I do generally keep my knives sharp and happen to have a grape to hand, does this pass (approx 2.5mm from top)...

Nearly... you have to be able to take a slice off the grape or tomato without touching it other than with the knife... no fingers involved.

I've done another one this week (2 hours+) and I am picking up a knife from work to do over the rest of the week/weekend.

If... big if. I do't run out of grinding stones. May have to reclaim on expenses.

Ah ok! Does sound super hard when the grape will just fall over but I’m going to sharpen more tomorrow on my break and see if I can give that a go!!

The fun we can have in lockdown!! Thanks 🙏

What do you sharpen this knife with out of interest? Or is it whetstones & therefore a process?

Cut it in half first, then cutside down on the board. Then take slices off the top.

I had to Google the grape test too! redface I gave main main knife a quick go on a steel and it's sharp but I needed to hold the grape to get it started. More rain today so I might get to it properly...

I use one of these off eBay.

A cheats version of a whetstone, no real skill using it once its set up.

I only re-sharpen knives at home once or maybe twice a year if really bored and then use a diamond and ceramic "steel" to maintain them.
